Cauliflower Salad 
1/2 Cauliflower

2 Carrots

2 Tomatoes
1/4 cup soaked raisins (cover with water and soak 1 hour).
1/2 cup cashews and or sunflower seeds.
1t curry powder
1t tumeric
2 T olive oil
2 T cider vinegar
1- 2 t honey or real maple syrup (optional) 

Blend cauli until rice like consistency - remove and add to salad bowl.Blend remaining ingredients use the water the raisins have been soaked on also.Mix with the Cauli, refridgerate or eat immediately. 

Notes: If making for the kids I use less curry powder and if they are still a bit dubious add a bit of grated cheese.This salad is actually better left overnight as all the flavours meld and can be kept in the fridge for 2-3 days. Very handy.
