Almond Flour Banana bread/Cake (GF)
 
Preheat oven to 160oC
3C almond flour
1t baking soda
1C mashed bananas (3 or 4)
¼ C melted butter, olive oil or coconut oil
¼ cup maple syrup or honey
3 eggs
 
 
Combine almond flour and baking soda in a large bowl
Combine remaining ingredients in another bowl and mix well.
Add wet ingredients to dry ingredients and mix to combine.
Pour into greased lined loaf tin or round cake tin bake for 50-60 minutes. Test with dry knife.
 
Notes: A yummy gluten free high protein banana loaf, try swapping bananas with pureed apple or pear for a change.
